Step-by-step cooking

Cooking time: 2 h 20 min
  1. Step 1:

    Step 1.

How to bake shorty? Prepare the products. Pre-sift the flour, this will not only rid it of possible debris, but also saturate it with oxygen, which will make the baking softer and more airy. In addition to the ingredients from the classic recipe, there will also be optional ones: sugar and poppy seeds for sprinkling, you can take sesame instead of poppy seeds.

  2. Step 2:

    Step 2.

Prepare the sourdough. How to make sourdough? Pour yeast and sugar into warm boiled water, mix. The water temperature should be 37-38 degrees, not higher. In hot water, yeast, which are living organisms, will die. At a comfortable, slightly warm temperature, the yeast will activate and be ready to work.

  3. Step 3:

    Step 3.

Add a little flour to the water with yeast, mix and leave for 10-15 minutes. Bubbles will have to appear on the surface — this means that the sourdough has come to life. If this does not happen, it means that the yeast is spoiled, you will have to take others.

  4. Step 4:

    Step 4.

Add the rest of the flour to the dough and knead the dough. Do not pour all the flour at once, add it gradually and watch the consistency. The dough should become homogeneous and soft, hard bread will turn out from too steep. Flour in this case may need both more and less of the amount stated in the recipe. Roll the dough into a ball and put it in a warm place for 2 hours to rise. During this time, remember him once.

  5. Step 5:

    Step 5.

The dough should double in size — then it will be ready.

  6. Step 6:

    Step 6.

Divide the dough into 12 parts. Roll out each piece into oval tortillas about 20 cm in length and 8 cm in width, about 2 cm thick.

  7. Step 7:

    Step 7.

Chop the tortillas with a fork and sprinkle with poppy seeds (or sesame seeds). Place the shorty blanks on a baking sheet covered with baking paper.

  8. Step 8:

    Step 8.

Bake the shorty in the oven preheated to 230 degrees, 8-10 minutes until golden brown. Cool the finished shorties on the grill.

  9. Step 9:

    Step 9.

Fragrant, bubbly on the break or cut shorty is ready! Enjoy your meal!

Real shorty is baked in a tandoor, its shape can be different: from large elongated strips of dough to portions, a hole in the center is required so that the dough does not bubble in the tandoor. In the oven, shorties are made more often of oval or rectangular shape, often with elongated corners.

Dry yeast can be replaced with fresh pressed yeast, based on the proportion of 1:3. That is, for 1 gram of dry yeast required by the recipe, you need to take 3 grams of fresh.
