Delicious and incredibly beautiful cookies! Easy to cook! Soft shortbread cookies are very easy to cook. If you add red cranberries and green pistachios to it, the cookies will turn out very elegant. Therefore, it can be prepared for the holidays. Ideally - New Year's Eve. But you can also bake such cookies, for example, for a children's birthday. Or put cookies in a beautiful box and give them to a loved one. By the way, the dough can be prepared in advance and stored in the freezer for a month.

Butter should be taken out of the refrigerator in advance so that it softens at room temperature. Cut the pistachios into pieces, if the cranberries are large, then it can also be cut into a couple of pieces.

We transfer the oil to a suitable container for making dough. Pour vanilla extract on it, mix. Pour brown sugar into the container, stir everything again until smooth. It is best to mix the future dough with a wooden spatula or spoon.

Now sift the flour directly into the container with the rest of the ingredients, mix everything well again. It's time to add the main ingredients - cranberry and pistachio slices! And at the same time, you can get aesthetic pleasure by interrupting cooking for half a minute and admiring the combination of colors.

Mix everything again. It is most convenient to do this with your hands. As soon as the dough is mixed, turn on the oven to warm up. The required temperature for baking cookies is 180 degrees Celsius. Meanwhile, we spread the dough on the work surface and cut it into two equal parts.

From each part of the dough we form sausages equal in width. At this stage, you can wrap all or half of the dough with cling film and freeze it to use later. But we do not freeze, but continue cooking. We cut the sausages into identical circles. If the dough is too soft and does not cut well, it should be placed in the freezer for literally 5-10 minutes. You can also roll out the dough into a layer and cut circles using a mold or even a glass.

Cover the baking sheet with parchment. We put the cookie blanks on paper, retreating from each other at least a couple of centimeters. Put the baking sheet in the oven for 10-15 minutes. Cookies do not need to be cooked until they are browned so that they remain soft.

We remove the cookies from the oven, let them cool down and serve them to the table.
