Zhizhig galnash Chechen

Delicious and hearty national Chechen dish. Zhizhig-galnash in translation from the Chechen language means "meat dumplings". And it really is a dish consisting of pieces of boiled meat and dumplings made of dough, which are served to the table with a sauce made from the broth in which the meat was cooked, with garlic and spices. Zhizhig-galnash with its ingredients and cooking method resembles such a Russian dish as chicken soup with homemade noodles. However, zizhig-galnash differs in the way it is served and it is prepared from different types of meat: chicken or turkey, beef or pork, and even from valuable varieties of fish.

Chicken fillet is washed under running water, cut into small pieces, put them in a saucepan, pour cold water over the fire, bring to a boil, remove the foam, reduce the heat to medium, add salt to taste and cook until ready.

    Prepare the ingredients for dumplings. Dumplings for Chechen zhizhig-galnash are made from wheat or corn flour. The forms of such dumplings are not strictly uniform, each hostess has her own, almost unique.     In the boiling broth, we lower the dumplings in batches, immediately mix with a spoon so that they do not stick together and do not stick to the bottom of the pan. Cook the dumplings over medium heat for about 15 minutes.

    Preparing the sauce. It's very simple. Peel the garlic and cut it into pieces, rub it with salt and pour the broth. The sauce is ready, pour it into a bowl.
