Perepecha is part of the culinary recipes of Belarusian housewives. They prepare the Repechage in their own way. This is by right a national Belarusian dish, delicious and healthy food. It is served Perepecha, both to the first course and to the second. That's how my grandmother taught me how to cook Perepechu.
To begin with, I make a sourdough of their yeast, warmed milk, a pinch of salt and sugar. It will take time for the sourdough to come up. At this time, separate the yolks from the whites in the eggs. Whisk the whites and rub the yolks. After the sourdough is suitable, pour the crushed yolks and whipped whites into it. Next, add flour and melted butter in small portions. Knead the dough. It should come out with bubbles. Divide it into 4 parts and make cakes out of them. Put them on a baking sheet greased with vegetable oil and sprinkled with breadcrumbs. Bake until golden brown. You can bake a Perepecha with a filling in the form of curds or cheesecakes. for beauty, you can sculpt not simple round cakes, but something like what I got. The sample in the photo.
Bon appetit!
