    For the souffle, whisk the whites into a strong foam, gradually adding powder in small portions. If the squirrels do not climb well, you will not be able to see "tears".

    Preparing the filling. To do this, mix all the ingredients in a blender until smooth. We take the dough out of the refrigerator and put it in the mold, making a rim (the diameter of the mold is 24 cm) with a layer of 0.5 cm. We put the cottage cheese filling on top.

Turn off the oven, open the door and leave our cake to cool down in this state. The souffle will settle a little, don't worry, it's not scary. After 40 minutes, we take it out and let it stand until it cools down completely. After an hour and a half, tears will begin to appear, sometimes earlier.
