    Necessary Ingredients: For the cake - flour, cream, yolks, yeast, sugar, vanilla sugar, butter, spices, zest of the 1st lemon, raisins, salt. For the glaze - powdered sugar, egg (protein), lemon (juice), gelatin. I took exactly half of the ingredients specified in this recipe.

    Sift flour. Pre-soak the raisins. Dry on a towel. Mix with flour and shake the excess through a sieve. Sourdough: dilute yeast in 1 cup of warm cream. Add part of the sugar and flour, stir well, cover with a film and put in a warm place for 40 minutes.

    When the dough is suitable, add softened butter, ground with yolks, remaining sugar, vanilla sugar, spices, zest, salt, cream. Then the raisins and flour. Now the dough needs to be kneaded very well and knocked out.Knead for about 10-15 minutes. Knocking out the dough is necessary to remove excess carbon dioxide. To do this, lift it several times and throw it on a clean cutting board.

    After that, cover the dough with a film and put it in a warm place for 1.5-2 hours to rise.

    It should double in volume. When the dough is suitable, before sending it to the molds, it must be thoroughly kneaded again.

    Grease the molds with butter and sprinkle with breadcrumbs. Shake off the remnants.

    Fill the prepared molds with a third of the dough, cover with a film and put them back in a warm place for about 1 hour. Bake at a temperature of 160 degrees. After 40 minutes, increase by 180 degrees and bake for another 10-15 minutes. Since I have a reduced dosage, I baked for a total of 30 minutes. Explanations for baking are in the Note.

    Remove the finished cakes from the mold. Cool on the grill.

    Preparing the glaze. So that it does not crumble, we use gelatin. Pour 1 teaspoon of gelatin with 2 tablespoons of cold water. Leave to swell for about 1 hour.

    Squeeze the juice out of the lemon. We need 2 tablespoons.

    Beat the protein. Then add powdered sugar, gelatin and juice. Beat until stable peaks form.

    After the cakes cool down, decorate with icing and various sugar sprinkles. This glaze freezes long enough. It will be ready in the morning.

Note: the total baking time depends on the size of the cake.
1.5 kg – bake for about 1 hour. If the prepared dough is divided into 2 cakes, they are baked for 45 minutes. If small sizes of molds are used, then bake for 30 minutes.

From this amount of ingredients, about 3 cakes are obtained, 700 grams each. For me, this is too much, so I took exactly half of what is indicated in this recipe. I have molds with a diameter of 8 cm and 11 cm.

All ingredients must be at room temperature!
Candied fruits and almonds are added to the original recipe. But, somehow I don't like them, so I managed only with raisins. If anyone is interested: almonds - 50 grams, candied fruits - 100 grams (then raisins should be taken not 200 grams, but 100 grams).
