1. Cooking crumbs (crumble).
- Rub parmesan cheese on a fine grater.
- Mix flour, grated parmesan and cold butter in a bowl until crumbs form. Put it in the freezer before use.
2. I had pickled beef. Diced and pickled, the marinade is simple: salt, black and red pepper, dry white wine half a glass. Marinate for 1 hour.
3. Drain the marinade from the meat, dry it with paper towels from excess juice. Fry in a preheated frying pan in vegetable oil until golden brown.
4. Peel, wash, dry and cut potatoes with a potato peeler (thin layers are needed). Add salt and cook in a steamer until medium ready.
5. Wash the leeks, dry them and cut them into rings (only the white part). Lightly fry in vegetable oil and add cream, simmer for a couple of minutes.
6. In portioned ceramic molds, lay out layers of potatoes first, then meat, then leeks in sauce, and again repeat potatoes, meat, onions with sauce and cover with potatoes, and sprinkle crumbs on top (crumble).
7. Preheat the oven at 200C, then reduce to 185C and bake for 25 minutes until golden brown.
Bon appetit!
