Potatoes with vegetables in a pot are a popular dish in the Caucasus, in the old days it was it is customary to cook on a fire, now the fire has been replaced by an oven.
So let's start cooking. I wash the meat, let the water drain from the meat, cut into medium pieces, salt, pepper, fry in hot oil from all sides for 5 minutes, transfer to a ceramic pot. Peeling onions and potatoes. I chop the onion, but on the contrary I cut the potatoes coarsely. I cut eggplant into cubes, tomatoes in quarters, Bulgarian pepper with straws, string beans in cubes of 2.5 centimeters. Chili pepper is only mine. I put the prepared vegetables in pots with meat and potatoes, salt. I add water (the water should completely cover the contents of the ceramic pot) and close the pot with a lid (if there is no native lid from the pot, you can make a lid from ordinary dumpling dough). I put the pots in a preheated oven to 18-200 degrees and stew for an hour and a half. Already in the finished dish, I add chopped parsley and garlic and mix again.
