Despite the fact that chanakhi is a dish of Georgian cuisine made of mutton with a traditional set of vegetables and spices, each region has its own peculiarities of its preparation. Chanakhi in Batumi is a food that is sure to treat long-awaited guests in Batumi.

In order that I could please the loved ones of the chanakhi in Batumi, a Batumi acquaintance gave this culinary recipe.
I wash eggplants, cut off their tips, cut them in half, pour boiling water for 4 minutes, drain the water from them and put them under pressure for half an hour.
I cut lamb into cubes, peeled potatoes into slices, chop onions. Pepper the fat and combine it with chopped greens. The resulting mixture is stuffed with eggplants, the halves of which are joined together.
In ceramic pots I put layers of potatoes, onions, lamb, eggplants. I pour everything with broth, to which I add tomato paste, salt, allspice, crushed garlic and bay leaf.
I put the pots in the preheated oven for half an hour. Then I add sliced tomatoes to the pots with chanakhi and put them in the oven again for half an hour.
Let's sum up: just an hour and a half and there are six ceramic pots with delicious and healthy food from the Batumi chanakhi on the table.
