Tomatoes in the snow with garlic for winter

Looks spectacular, very tasty and extremely useful! An interesting preparation of tomatoes does not require a lot of spices. Tomatoes with crushed garlic really look like under the snow. In winter, you can serve canned food as an addition to meat or potatoes. The recipe is designed for 2 liter cans.

    Thoroughly wash the liter cans with soda. Dry it. How to sterilize cans in the oven? Put them in a cold oven with the bottom up. Warm up for 15 minutes at t 120 °C. You can also sterilize the containers in the microwave or over steam. Boil the washed metal lids for about 10 minutes. Which tomatoes are best suited? Take fruits of small size, without damage, ripe, fleshy, but dense. Too soft tomatoes in boiling water will fall apart.

    Wash tomatoes well. Put it on a towel and dry it. Before putting tomatoes in containers, pierce them in several places with a toothpick so that when pouring hot marinade, their skin does not burst. Tightly fold the tomatoes (how many will fit) into two prepared jars. Boil the filtered water. Pour boiling water over the tomatoes. Let them stand for 20 minutes, covering the jars with lids. Drain the water into a saucepan. Add sugar and salt. Boil it.

    Peel the garlic from the husk, rub the slices on a medium or coarse grater. Garlic mass should get 2 tablespoons. To chop garlic, you can take a blender or cut the cloves as small as possible with a knife. You should not use a garlic chopper. Garlic passed through the press will make the marinade cloudy.

    Arrange one tablespoon of grated garlic in jars with tomatoes. Pour 9% vinegar (1 tbsp each) into each jar. Pour hot marinade. Roll up the lids. Shake lightly so that the garlic mass is distributed throughout the jar. It really looks like white snow. Turn the jars over. Wrap them up with a blanket and leave them so until they cool down completely.

    Store the preservation in a dark, cool place (cellar, balcony, refrigerator). Enjoy your meal!

Although the recipe does not provide spices, if you want, add black and allspice (2-3 pieces each), bay, currant leaf, cloves (2 pieces), chopped fresh parsley, dill umbrellas.

Vinegar can be replaced with citric acid (1 teaspoon per liter jar).

If you plan to eat canned tomatoes right away, it is not necessary to sterilize the cans. Close them with clean plastic lids. Store in the refrigerator until serving.
