In the usual menu, no one will be surprised by the presence of sauces. Many of us can't even imagine this or that dish without our favorite sauce. Sauce is a liquid seasoning for the main dish or side dish. It gives a juicier consistency to dishes and increases their caloric content.

Sauces are served with meat, poultry, fish. There are sauces that go perfectly with vegetables. This kind of seasoning can not only be served in a beautiful saucepan on the table, but also used in the cooking process. For example, to make the meat more tender and juicy, it is stewed in a special sauce.

Sauces can be very different: hot and cold, spicy-spicy and lean, as well as sweet. Sweet sauces are served with various kinds of desserts and fruits.

There is a category of so-called White sauces. One of these sauces will be discussed in this recipe. This is Roquefort sauce. And it is called so because it is prepared on the basis of blue Roquefort cheese. Serve it well chilled. It will be especially delicious with meat dishes and pasta.

1. We grind Roquefort cheese. We just break it into small pieces with our hands.

2. Squeeze the juice out of the lemon. Green onions are washed under running water, lightly dried. Cut with a knife finely.

3. We put mayonnaise in a bowl, pour freshly squeezed lemon juice here, and also spread roquefort. Salt and pepper to taste, mix.

4. Transfer the mass into a sauce pan, sprinkle with chopped green onions.

5. We send the sauce to the refrigerator for about an hour, since it needs to be served chilled.

Eat with pleasure! Let each dish be elegant and delicious!
