You can grind cottage cheese in a meat grinder or blender. Do not melt the butter, but only bring it to softness, it should become plastic for mixing with cottage cheese. Often I bake cookies from cottage cheese and shortbread dough, using a mixture of sugar with lemon zest, crushed nuts, and cinnamon for filling and sprinkling.
