Pork marinade with soy sauce

Prepare a universal marinade for any pork dishes. Very often the taste of the finished meat depends on the pickling. Therefore, the choice and preparation of the marinade should be given enough attention. A marinade of soy sauce, vegetable oil and onions will make the meat soft, juicy and fragrant.

    Prepare all the necessary ingredients for the marinade. You can replace the finished mixture of spices for pork with a pinch of curry, paprika, cardamom, nutmeg, coriander, basil. For sharpness, you can add chili pepper on the tip of a knife.

    Peel and finely chop the onion. I use red onion for the marinade - it is slightly sweeter and milder to taste. If you don't have a red onion, you can use a regular onion. Shallots are also suitable. The onion can not be cut, but crushed in a blender to a puree state or passed through a meat grinder. In this case, the marinade will be more viscous and fragrant.

    In a bowl, combine soy sauce, vegetable oil, a mixture of spices for pork, sugar, salt and ground pepper. Mix everything thoroughly. You don't need to add salt - soy sauce is already salty. Some mixtures may contain a lot of burning hot pepper. Therefore, when using such spices, it is better not to add ground black pepper or add a little - the sauce may turn out to be too spicy.

    Add chopped red onion and garlic cloves passed through the press to the sauce. Mix everything again.

    Pork marinade is ready. It can be marinated as a whole piece of meat, for example, carbonade weighing up to 600 g, or small or medium pieces of pork (goulash, loins, escalopes, entrecotes, etc.), as well as meat for barbecue. This amount of marinade is enough for 500-600 g of pork.

This marinade is suitable not only for pork, but also for any meat or poultry, be it lamb, beef, chicken or turkey.
The marinade is based on soy sauce and vegetable oil. If desired, you can add 1-2 tablespoons of tomato paste or ketchup to this marinade. To give the marinade a piquant note, a small piece of ginger root grated on a fine grater or 1/2 tsp of dry powder is suitable.
Garlic can also be replaced with a similar powder.
