First chop the currant berries. You can do this with a meat grinder, chopper or blender, or crush it with a potato masher. When chopping berries, gradually add sugar. Ie, in a meat grinder or in a chopper, be sure to put sugar before chopping, and pour some of it into a saucepan with grated black currant. When all the berries with most of the sugar are ground, mix everything well in a saucepan, cover with a lid and put in the refrigerator. The next day, mix everything thoroughly again, if the sugar has melted, add the rest of the portion, mix well with a blender or spoon, put it in the refrigerator.

After a day we take it out, mix it well, and put it in the refrigerator again for a day. Then you can put our currants in jars. They must be clean, sterilized, and at the same time cold, i.e. after sterilization they will need to be cooled so that the workpiece does not ferment. We put the currants in jars under the neck, sprinkle the currant with sugar, which will serve as a barrier between the currant and the air. We close them with clean nylon lids and send them for storage in the refrigerator or cellar.
