Tincture of chokeberry

A real Russian drink, bright and original. The tincture of chokeberry has a unique, incomparable taste - because of the berry itself (aronia). So the tincture on it stands out among all. Beautiful, with a characteristic taste and smell. In winter - just a pleasure!

Step-by-step cooking

Cooking time: 14 d
  1. Step 1:

    Step 1.

How to make a tincture of chokeberry? Prepare the ingredients. Chernoplodka is suitable both fresh and frozen. Remove fresh leaves and twigs, wash and dry. Defrost frozen at room temperature. Take a proven vodka. Remove the zest (yellow peel) from the lemon by rubbing the washed lemon on a grater with small holes.

  2. Step 2:

    Step 2.

I recommend piercing each berry with a toothpick. You can also slightly press down the berries with a pusher (a press for puree), but do not get carried away so that the berries do not turn into puree: then it will be more difficult to filter the drink. Be careful with the juice of aronia! He has an extremely persistent blue-violet pigment. If the juice gets on the work surface, immediately wipe it with a damp cloth.

  3. Step 3:

    Step 3.

Put the berries in a clean and dry glass jar. I have a volume of 500 ml.

  4. Step 4:

    Step 4.

Pour the specified amount of vodka into the jar.

  5. Step 5:

    Step 5.

And add lemon zest. It will make the drink even more interesting to taste. You can replace it with the zest of orange, lime or any citrus that you like. Each time the drink will be a little different.

  6. Step 6:

    Step 6.

Mix the tincture thoroughly. At this stage, you can add sugar to the jar at the rate of 2 tbsp.l. and more, depending on how much you like sweet tinctures. This recipe is sugar-free.

  7. Step 7:

    Step 7.

Cover the tincture with a paper napkin and tighten with an elastic band. Put the jar in the pantry for 2 weeks. Stir its contents every 2-3 days. Before use, filter the tincture through several layers of gauze or through a special purchased filter.

After filtration, the tincture becomes completely transparent. I think that your guests will be very happy if you treat them to such a wonderful homemade tincture of red-burgundy color, like a precious ruby.

Have a nice tasting!

Since the degree of salinity, sweetness, bitterness, sharpness, acid, burning is individual for everyone, always add spices, spices and seasonings, focusing on your taste! Keep in mind that if you put a lot of zest, it can give the drink excessive bitterness and tartness instead of a light citrus note.
