Plum liqueur can be prepared in two ways: using an alcohol–containing base, or without it - only from fruits and sugar. In any case, it turns out to be a great dessert drink. The first method of making a drink is faster and simpler, and the liqueur turns out to be stronger.

    Prepare the ingredients for making plum liqueur by infusing on an alcoholic basis – vodka. The main thing is that the vodka should be of good quality, without a sharp smell and not counterfeit products. The plum for the drink can be taken of any variety and any color, it is important that the fruits are ripe, but not overripe, without visible signs of mold and rot.

    You can make plum liqueur with or without pits, it's a matter of taste. The presence of seeds affects the astringency of the drink. However, plum seeds contain prussic acid, which is dangerous to health in large quantities. Therefore, it is better not to store ready-made liqueur on a plum with bones for a long time. We wash the plums well under running water, preferably each fruit separately. We throw the plum into a colander, let the water drain.

    Put the washed plums in a glass jar or other container that will not oxidize. Fill the contents of the jar with vodka so that it covers the fruit above a couple of centimeters at least.

    Close the jar tightly with a nylon lid or gauze and put it in a dark place at room temperature for a month and a half. Once a week, the jar needs to be shaken so that the infusion goes better, the plum is better saturated with alcohol and gives its juice.

    Then we drain the vodka from the can of plums into another container. Fill the plum with sugar, close the jar with a lid again and put it in a dark warm place for 15 days. Once a day, the plum with sugar needs to be shaken so that the sugar dissolves, and the plum releases the juice. After the specified time, we drain the plum syrup formed in a jar with plums, filter it through gauze folded in several layers.

    Combine plum syrup with vodka infused with plum. When mixing, the precipitate may fall out again. Once again, we filter the infusion through gauze with cotton wool. We bottle the drink, seal it tightly with corks. We remove the liqueur for storage in a cool place.
