Step-by-step cooking

Cooking time: 1 h 50 min
  1. Step 1:

    Step 1.

Berries are all ours, so let's start with them. If you took them with twigs, we will gather them and sort them out – for the presence of rotten ones, first of all.

  2. Step 2:

    Step 2.

After removing twigs and debris, wash the berry. This is done in several ways – do as you like. You can do it in a colander. And I poured water into a basin with a berry a couple of times. The first time an invisible garbage surfaced, and the second time I drained clean water.

  3. Step 3:

    Step 3.

We need to prepare jars and lids – sterilize them in a convenient way and let them dry if possible.

  4. Step 4:

    Step 4.

Let's put water to boil in parallel. If the jars and lids are ready, let's carefully arrange the prepared berries in them.

  5. Step 5:

    Step 5.

I had three cans – one with a capacity of 1.5 liters, and two with a capacity of 0.9. I put 200 g of berries in the first one, and 100 g in the other two.

  6. Step 6:

    Step 6.

As soon as the water boils, let's pour it over the berry. Covering with lids, let's stand until the water cools down (I have it cooled down after 20 minutes).

  7. Step 7:

    Step 7.

Pour the water into a saucepan, add half the sugar. Let it dissolve.

  8. Step 8:

    Step 8.

Boil the water with sugar again and pour the berries a second time. Cover with a lid, and wait for cooling again.

  9. Step 9:

    Step 9.

So let's do it again, adding the second part of the sugar.

  10. Step 10:

    Step 10.

Let's salt it for the last time and, after boiling, pour the berries to the neck. Roll up and turn the lids down. You can wrap them up with a warm blanket, which I did - they stood all night, and in the morning they were pleased with a gorgeous bright color.

And more tips
Do not worry if the compote is almost colorless when spinning – soon you will see how it is saturated with its bright ruby color. By the way, the color and saturation depend on the number of colors that you put on the jar.
You can vary with the amount of both sugar and berries.
If you want variety, close the dogwood compote by adding different fruits and berries to it.
You can roll up the compote in other ways – for example, pouring boiling syrup or after sterilizing cans of compote liquid.
It is advisable to take ripe, but not overripe fruits, because the latter quickly disintegrate after pouring boiling water.
The dogwood stones do not need to be removed, because the process is complicated.
And about the shelf life of such a dogwood billet for the winter – it is stored for no more than 1 year, so close it so that you have time to enjoy this beauty.
