    How to make gluten-free pizza? Measure out the necessary ingredients for the dough. You can take any flour that lacks gluten (amaranth, soy, chickpea, buckwheat). Heat the water slightly.

    Dissolve yeast and sugar in 50 ml of warm water. Leave the mixture for 10-15 minutes so that the yeast is activated and a foam cap forms on the surface.

    Mix rice and corn flour, sift through a sieve.

    To knead the dough, take a convenient container. In the rest of the water, dissolve the salt, pour in the yeast mixture, mix.

    Pour in the sifted flour mixture. Mix first with a spoon, then knead the dough with your hands.

    The dough turns out to be very tender, slightly sticky to the hands. Cover the dough with cling film and leave at room temperature for 30 minutes.

    Any gluten-free products can be used for filling. I took a homemade tomato sauce. Mozzarella can be replaced with parmesan, cheddar or feta. Instead of olive oil, any odorless vegetable oil will do. Choose juicy tomatoes, but dense, so that when sliced they retain their shape.

    Boil chicken fillet in boiling salted water until tender, cool.

    During proofing, the dough will practically not rise, it will only become a little more lush to the touch. Grease the parchment with oil, form a round base about 0.5 cm thick from the dough. This dough does not have viscous and elastic properties, so it is more convenient to do it with your hands, not with a rolling pin. Brush the surface of the dough with olive oil.

    Divide the chicken fillet into fibers or cut into small pieces. Spread the fillet pieces evenly on the dough.

    Peel the pepper from the seeds, cut it arbitrarily. Add pepper to the tomato layer.

From the specified number of ingredients, I got a pizza with a diameter of about 24 cm.

The taste of this pizza compared to the usual is a little unusual because of the dough. The basis of rice flour is twice as much, but, in my opinion, the taste of corn flour is leading.
