Wet put in a cold oven with the neck down, also spread out the lids. Turn on at 150 degrees, after reaching the set temperature, sterilize the jars 1L - 15 minutes, 2L - 20, 3L - 25 minutes. For me, this method of sterilization is the most convenient, I have been using it for many years, I have not failed.

    Prepare the products, I took 4 jars x 0.720 for this amount of berries. It is convenient for me to cook compote in small ones. Such a volume without sterilization is usually not recommended, but I have already cooked and the jars stood perfectly, and in the conditions of the apartment / the place is dark and cool /.

    Sort out the fresh berry / the spoiled one should not get in!/, rinse with cool running water in a colander, dissecting the water, let the water drain. I do not defrost frozen berries, but I wash them necessarily.

    Fill in warm, prepared jars for 1/3 blackberries or other tender berries. I got 70-75g per jar, but this will be enough for a good, rich compote.

    Then pour boiling water over the jars with berries to the edge of the neck, cover with a sterile lid and leave for 15-20 minutes. To prevent the jar from bursting, lower the spoon into it and direct the water flow to the metal. I fill all 4 cans at the same time.

    After the prescribed time, the water in the jars will turn pale pink. During this time, pasteurization will take place in the banks.

    After 20 minutes, drain the water from all the jars into a saucepan, the berry remains in the jar. It is convenient to drain through a special lid with holes. Bring the drained water to a boil, add 200 grams of sugar and stir. Reduce the heat to a minimum, throw a slice of lemon into the syrup and let it boil for 3-4 minutes, until the sugar is completely dissolved. / You will get a fragrant, homogeneous syrup/.

    Then pour boiling syrup over the jars of berries with overflow, immediately tighten the lid, wipe and roll on the table, checking for sealing. /It is better to use natural wood/. We don 'T put lemon in jars ! If there is not enough syrup, just add boiling water. Then turn the jars over on the lid, cover with a blanket and leave to cool. Then immediately take it to a cool, dark place for storage or put it in the refrigerator.

    From the minimum amount of berries, it turned out 4 jars of 0.720 liters of excellent compote. Let it stand for at least a week, it will infuse and be sure to please you with a delicate aroma and wonderful taste!

To prepare a concentrated compote, you need to increase the amount of sugar and berries.
To add flavor to the compote, you can add lemon, rum or other spices to taste. Blackberry compote can be prepared together with other berries and fruits, taking into account the peculiarities of their processing.

Some confuse this berry with a black raspberry. In fact, this is a completely different culture, which has received the nickname Hedgehog for its "prickly" character, and in folk – blackberry.
Even in the form of preservation, it is able to increase immunity, support the body during vitamin deficiency, protect against influenza, infectious and inflammatory processes.

Most often, individual intolerance to berries is indicated as a contraindication.
It is also not recommended to include fruits in the diet for serious heart pathologies, for chronic intestinal disorders.
