Naturally, it is better to make tomato juice from tomatoes grown on your site, in environmentally friendly conditions, from vegetables ripened right on the bed, tasty and sweet. In addition to the tomatoes themselves, salt and vinegar will be required, as well as a meat grinder, not necessarily electric with special nozzles for juice. The simplest Soviet meat grinder will cope with this task easily, however, the juice will turn out with seeds, but this will not spoil the taste of the drink.

    Tomatoes are thoroughly washed under running water. If we use a conventional meat grinder for work, without juice nozzles, then the peel from tomatoes must be removed, otherwise it will pass along with the pulp. We put them in a container with boiling water for a couple of minutes, take them out and immediately dip them into a container with cold water. This little trick will make it easy to remove the skin from the fruit. Cut out the stalk and remove the skin.

    Cut tomatoes into quarters so that they can be conveniently passed through a meat grinder.

    Tomato juice passed through a meat grinder is poured into a saucepan with a thick bottom. We put it on fire. Bring to a boil, reduce the heat and cook the juice for about 15 minutes. The foam formed on the surface is removed. Add salt to your taste. You can put it a little more or less than in the recipe - try and adjust for yourself. Sugar can also be added at will or dispensed with. Stir the mixture and cook for another 5 minutes.

    Then pour in the vinegar. Mix it up. Remove the tomato juice from the stove.First you need to prepare jars for rolling tomato juice for the winter. To do this, we wash the cans with running water with soda, sterilize them in any convenient way: in the oven, in the microwave or in a water bath. The lids are washed and boiled.

    We pour the juice into prepared jars, it is better to take a small volume of cans so that after opening the juice jars do not store for a long time. We immediately roll up the jars with lids.
