I have ordinary white sugar, but you can also take cane sugar - it will give a caramel flavor to the finished jam, or coconut sugar - it will give a coconut flavor, respectively.

    Wash the apples, leave the leaves and twigs - with them the vase will be more beautiful and original. Pierce in several places with a toothpick - this is done so that the peel does not burst during cooking and the apples remain intact.

    Fill the apples with half the sugar and leave for a few hours to extract the juice, you can leave overnight. Apples are not berries, so do not expect an abundant release of juice.

    Pour the rest of the sugar with water and dissolve it. (you can heat the syrup a little so that the sugar dissolves better).

    Pour the syrup into the apples, mix. Lovers of spicy jam can now add some spices and seasonings to the berries. Cinnamon, vanilla, cloves, star anise - all this will be very appropriate in apple jam. You can take whole seasonings: in pods, sticks, buds and stars (but in this case, do not forget to remove them from the jam at the end of cooking), you can also use ground spices - a pinch of each will be enough.

    Bring the mass to a boil and cook over low heat, constantly removing the foam, for about 40 minutes. For cooking, I recommend using dishes with a thick bottom - jam will not burn in such dishes.

    Sterilize the jars in any convenient way. I pour a little water into each jar and put it in the microwave for 5-7 minutes. But you can sterilize the jars in the oven at 100 degrees for about 30 minutes, or just scald them or hold them over steam. It is enough to boil the lids for 5 minutes. Put the finished jam in jars (you can put it directly hot or let the jam cool down), close the jars tightly with lids or roll up.
