1. My apples, we do not remove the stems. Each apple is pierced through with a wooden toothpick.

2. Prepare the syrup, for this we pour sugar into a saucepan, fill it with water, send it to the fire. When the sugar crystals melt, add citric acid.

3. In the boiling syrup, spread the ranettes, bring to a boil, cook for 10 minutes. Remove the pan from the heat.

4. Cover the apples with a flat plate, which is smaller in diameter than the pan, set the load, leave for 10 hours. This structure is simply necessary in order for the apples to be completely immersed in syrup.

5. After the specified time, we re-boil the apples and also put them under pressure for 10 hours.

6. Then boil the jam again, after which we put it in prepared sterile jars, roll up the lids.
