Mashkhurda in Uzbek

Dilute the winter cold with oriental notes! Fabulously delicious and fragrant! The dish is hearty and recommended for winter, but I cook it in all seasons. Mashkhurda is a bit like Georgian kharcho soup, but it turns out to be more saturated. We are leaving "with a bang ", and if one of our friends or relatives gets to lunch with this yummy, they definitely beg for a recipe)))

Mashkhurda is a traditional winter dish of Uzbek cuisine. Like many oriental dishes, it is cooked on lamb or beef, and it is also made very spicy and spicy.

1. Beef should be divided into small portions.
2. Peel and chop the vegetables: carrots - into strips, onions and bell peppers - into small cubes.
3. Heat the vegetable oil in a cauldron of the appropriate size and over high heat, stirring constantly, fry the beef until golden brown.
4. Turn down the heat, add onion, carrot and fry for 5 minutes, then add bell pepper and fry for a few more minutes.
5. Add garlic and spices passed through the press to the tomato paste, mix well so that all the ingredients "make friends". By the way, in summer, instead of pasta, you can use diced tomatoes (do not forget to remove the skin from them), or tomato puree.
6. Add the spicy paste to the meat and vegetable mixture, stir well and pour water over everything. At this point, a little salt is added, everything is brought to a boil and cooked for 20 minutes on low heat.
7. While the meat is languishing, you need to peel and cut the potatoes into small cubes, rinse the mash and rice. Mash will need to be left to lie in cold water for 15 minutes so that it cooks faster.
8. First add potatoes and mash, put rice after the seeds of mash begin to burst.
9. Next, cook the soup until the rice is ready.
10. Only after full readiness we try the dish and add salt to taste.
11. You can serve mashhurda with finely chopped herbs, sour cream or garlic.

Bon appetit!
