There are several recipes for harvesting quince with sugar for the winter, but my favorite is quince in sugar syrup, which I will tell you about.
Ripe quince fruits are thoroughly washed, the sponge is removed from the villi from the surface. After peeling the quince, cut it into pieces of the required size.
Chopped fruits are covered with boiling water.
We cook sugar syrup from sugar and water. To do this, we dissolve the sugar in water and bring it to a boil. After cooking for five minutes, add citric acid and remove the finished syrup from the heat.
Fill the quince pieces with ready-made syrup, mix thoroughly and cool.
Bring the cooled quince to a boil and cook over moderate heat, stirring occasionally, for 10 minutes, and then cool again.
Repeat the procedure with cooking and cooling two more times.
We put the finished quince in sugar syrup in clean, dry jars and close the lids.
The resulting dessert should be stored in a cool place.
