Rice-carrot porridge-krupenik with dried apricots

Incredibly delicious and healthy sweet porridge will delight you! Sweet krupeniki have long been a highlight of Russian cuisine. Today, with the advent of numerous desserts, they are completely undeservedly forgotten, but their taste is simply incomparable and they may well diversify even a solemn sweet table. I got acquainted with the culinary recipe of rice-carrot porridge-krupenika with dried apricots at a city festival, where amateur and professional cooks presented their creations to the general public. I liked the food so much that I asked to share the recipe and the cook was happy to write it down and handed it to me.

I cook the sorted rice in milk, and in the meantime I clean and grate carrots on a fine grater, wash and finely crumble dried apricots and beat eggs in a mixer. When the rice porridge cools down, I put dried apricots, grated carrots, sugar, eggs and vanilla in it. I mix all this thoroughly and put it in a greased oven dish. I warm up the oven to 200 C and bake a krupenik for about half an hour. I cut the krupenik like a cake and everyone gets a piece for sweet. Many of my friends say that rice-carrot porridge-krupenik with dried apricots is much tastier than cakes.
