Peaches, perhaps, are one of the most desirable fruits in central Russia, because it is quite difficult to get them even in season, and besides, nothing comes to mind just to eat them fresh, because they are quite expensive. But this summer I visited a cousin in the south of the Caucasus, where peaches are considered quite a common product and where a variety of food is prepared from them. So, it was there that I first tried to cook and eat peach jam, about the culinary recipe of which I will tell you now. We begin by selecting peaches, thoroughly washing them, cleaning them, removing the stone. Now we cut into approximately the same pieces of arbitrary shape. Now we put the peaches in a deep container and fill them with sugar, put them to soak in the refrigerator for about 6 hours. After this time, we take out our mass, which has already started the juice, bring it to a boil over low heat and boil for about 10 minutes. After that, let it brew for an hour. After that, bring it to a boil again and boil for 5 minutes. Then we cool the mass, mix it well with almonds and transfer it to sterilized jars and close them. Our jam is ready!
