In ancient times, the Arabs ground the grains just before brewing coffee for greater aroma. Nowadays, grains are finely ground either in a manual or in an electric coffee grinder. So, the coffee has been ground, we pour cold boiled water into a small jar to the level where it narrows. Put on the fire, bring the water to a boil and remove from the heat. Pour in the coffee, stir well until the foam appears. And again we put the jezva on a slow fire. The main thing is not to let the coffee boil. The foam began to rise — immediately it is necessary to remove the jezva from the fire. In Arabic coffee, add 1h. a spoonful of cold boiled water and pour into cups.
You can make coffee in Arabic and according to another recipe with the addition of sugar and cardamom. To do this, it will be necessary to grind several boxes of cardamom beforehand. Pour sugar, freshly ground coffee and cardamom into the jezva. Mix everything well and fill it with water. We put the jezva on a slow fire. As soon as the foam begins to rise, remove from the heat. Pour into cups. Cardamom not only gives a piquant taste, but also reduces the effect of caffeine on the human body, reducing the risk of increased blood pressure and palpitations.
