First, peel and dice the tomato, cucumber, and sweet pepper. Then finely chop the parsley. And then we put all the vegetables and herbs together in a large bowl, salt, pepper and mix.
Take a large pot of water, add salt to the water and bring to a boil. Now pour the pearl barley into boiling water and cook it for about 15 minutes. Then we add Farro to the water and cook the same amount. After this time, the pearl barley should have softened enough, but not enough to become completely soft. Inside, the grains should still be a little hard. Remove the pan from the fire and with a slotted spoon, you need to catch all the grains of cereals. We put the pearl barley in a bowl where it can cool and dry.
When the grains of cereals cool down enough, you can put them in a bowl with vegetables, after which we mix the whole salad and, if necessary, add salt and pepper.
In a separate bowl, mix olive oil with lemon juice. And then pour this dressing into a bowl with salad. That's all, the cereal salad with tomatoes and cucumbers is ready. As a result, we get a wonderful vegetarian dish, which is not only satisfying, but also vitamins "jump right out of it".
