    Peel the beetroot, wash it and lower it to boil in boiling salted water with a small amount of vinegar. Beets should be whole: in order for it to cook faster, you can take tubers of medium or small size. Cook the beets until they are ready, then take them out of the water, let them cool, then clean and cut into thin strips.

    At the same time, we put another pot of salted water on the stove – potatoes will be cooked in it, which must be pre-cleaned and cut into medium-sized cubes.

    Boiled potatoes together with sliced beets are sent to a beet broth, where we pour beet kvass (it can be replaced with lemon juice) in a small amount – so that the beetroot has a pleasant sourness. Potato broth can also be added to the main soup. Bring everything to a boil, salt and sweeten to taste. We cool it.

    Cut all the greens together with green onions finely, then rub into a pulp.

    Hard-boiled eggs in salted water for 10 minutes. Transfer to cold water until completely cooled. We peel them from the shell and cut them into small cubes.

    My cucumber, cut off the upper and lower tips from it, cut into small cubes. To do this, I first cut the cucumber into plates, then into straws and at the end into cubes.
