Kharcho with beef, potatoes, rice and tomatoes

Prepare a dish of Georgian cuisine with your own hands! I cook kharcho often, usually using lamb, tomato paste or sauce, and today I propose to cook the famous soup with beef and fresh tomatoes. It will be delicious, I promise)

Cooking method

We proceed directly to the process itself:
- cut the meat into cubes (so that the piece easily fits into a spoon);
- we put the meat in a saucepan, fill it with water, send it to the fire. After the broth boils, cook the meat on low heat for 60-90 minutes under a closed lid (do not forget to remove the foam with a slotted spoon);
- put the rice in a bowl, fill with warm water;
- cut potatoes into cubes (with an edge of about 1-2 cm);
- cut the onion into small pieces, and also chop the garlic (you can squeeze it out through a press);
- tomatoes are scalded with boiling water, then put in cold water (this will help to remove the skin from them without much effort). Peeled tomatoes are cut into small cubes;
- fry the onion in olive oil until browned (about 2 minutes), while stirring constantly;
- add some of the chopped tomatoes, simmer the vegetables for another 5 minutes;
- we try the meat for readiness, after which we add rice to the pan, after draining the water from it, as well as potatoes and the rest of the tomatoes;
- cook the kharcho until the rice and potatoes are fully cooked (it will take about 15-20 minutes in time);
- add the contents of the frying pan to the soup, salt, pepper, bay leaf, suneli hops, dried basil;
- it remains to cook the soup for another 5-10 minutes, after which we remove the kharcho from the fire, add garlic and chopped dill;
- we insist the dish under a closed lid for 7-10 minutes and serve it on the table.
