Step-by-step cooking

Cooking time: 1 h
  1. Step 1:

    Step 1.

How to make shins in a frying pan? Prepare the specified products according to the list. It is better to take the shins fresh, not previously frozen. You can take more or less garlic. From spices I use salt and ground black pepper, but you can take your favorite spices for chicken. Prepare a frying pan for frying.

  2. Step 2:

    Step 2.

If the chicken drumsticks selected for frying are frozen, then they need to be thawed beforehand. You can leave them at room temperature until they are completely defrosted, or you can use a microwave to speed up the process. The lower legs should be pinkish, without yellowness and bluish tint. They should not give off an unpleasant smell. Wash the shins under running water and dry them from moisture (with napkins, towels) so that there are no greasy splashes when frying.

  3. Step 3:

    Step 3.

Put the shins in a bowl, sprinkle with salt and pepper on both sides, rub with garlic. Garlic can be squeezed out through a press or finely chopped. Spices need to be thoroughly rubbed all over the shin, so that it is better soaked. Leave the shins for 10-15 minutes so that the meat absorbs all the flavor and becomes softer.

  4. Step 4:

    Step 4.

Put the selected frying pan on the fire, pour vegetable oil and heat it up. Put the prepared shins on the heated oil. Fry the shins on medium heat on one side for about 8-10 minutes. Make sure nothing burns.

  5. Step 5:

    Step 5.

Then turn the shins over, cover the pan with a lid and turn down the heat a little. Simmer the shins until tender for about 10-15 more minutes.

  6. Step 6:

    Step 6.

Serve the finished chicken drumsticks hot. This is a universal dish, which will suit any side dish: boiled rice, pasta, mashed potatoes, vegetables. In addition, such shins are good in a chilled form, they can be taken on the road or to work.

Many people prefer chicken drumsticks for frying from the whole chicken carcass: they are easy and convenient to eat, they are juicy, delicious, even if they are simply salted and fried in vegetable oil in a frying pan. In addition, cooking such a dish is also very simple. The main thing to remember is that chicken drumsticks are easy to dry out, so it is important to know how much they need to be fried in a frying pan. The time depends partly on the recipe, partly on the size of the legs themselves. Chicken drumstick weighing from 80 to 100 gr. fried first on medium heat until golden brown for 5-10 minutes, then stewed or fried on low heat under the lid for another 10-15 minutes, so that the total time is 20-25 minutes. Larger shins will take one and a half times longer to prepare.

Use oil with a high smoking temperature for frying! Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
Unrefined oils, with rare exceptions, have a low smoking point. There are a lot of unfiltered organic particles in them, which quickly begin to burn.
Refined oils are more resistant to heating, and their smoking point is higher. If you are going to cook food in the oven, on a frying pan or grill, make sure that you use oil with a high smoking point. The most common of the oils with a high smoking point: refined varieties of sunflower, olive and grape.
