Fried suluguni with tomatoes

Here is such an interesting breakfast you can serve to your family. In general, this piece of suluguni was originally planned for the preparation of khachapuri in Ajarian. However, my husband asked for something unusual for breakfast and I remembered that I needed to implement this recipe. It took absolutely nothing to cook, but the taste of this dish turned out to be just excellent. All lovers of cheese dishes will like this recipe.

    Prepare the ingredients. To prepare fried suluguni with tomatoes, we will need: suluguni, tomatoes (preferably plum-shaped), parsley, a little vegetable oil, ground black pepper and salt.

    Wash tomatoes, dry and cut into circles about 5 mm thick. For this recipe, it is better to take cream - they are not very large in size and quite dense, so I will not fall apart when frying and will retain their original shape.

    Cut the Suluguni into slices about the same thickness as the tomatoes. Slices can be made of any size and shape, because everything will melt in the pan anyway and become a single mass.

    Wash the parsley, dry it and separate the leaves from the twigs. You can also finely chop the greens with a knife. In addition to parsley, you can use dill or cilantro.

    Heat the vegetable oil in a frying pan, put the tomatoes and fry on medium heat on both sides for 1-2 minutes. Carefully remove the tomatoes from the pan.

    Put the slices of suluguni in one layer in the pan. The slices of cheese should lie as close to each other as possible so that there is not much extra space between them. Therefore, choose the size of the frying pan corresponding to the number of ingredients.

    Spread the fried tomatoes on top of the cheese that has already begun to melt. Fry everything together for 1-2 minutes until the cheese is completely melted.

    Season the dish with salt, pepper, sprinkle with parsley leaves and serve immediately.

Externally, this dish is very similar to a regular omelet with tomatoes. At first, my husband thought so when he saw it and was slightly disappointed: "I asked for something unusual and delicious, and we have an omelet again..." In the end, he was still very pleased. I think that such mini-surprises, when you take one for another, and then you are pleasantly surprised - this is the best start to the day.
