This snack comes from Georgia. The addition of nuts to salty dishes in Georgian cuisine occurs everywhere. If you haven't tried this combination yet, then I strongly recommend cooking such rolls at home. There is nothing complicated about them. After all, it is incredibly tasty, satisfying and healthy! According to your taste and desire, you can experiment with nuts and herbs, thus choosing the perfect combination! For me, the most Georgian combination is walnuts and cilantro.

How to remove the bitterness from eggplant? Cut the eggplant into plates, circles or cubes, add salt, leave for about 10 minutes until the juice is released. Drain the resulting liquid, rinse the eggplants and start cooking.

Note that in some cases there is no need to remove the bitterness from the eggplants - usually young vegetables are not bitter, as well as some special varieties of them.

Any oils are useful only until a certain temperature is reached - the point of smoking, at which the oil begins to burn and toxic substances, including carcinogens, are formed in it.
