Spanish paella with seafood classic

    How to make seafood paella? Prepare all the necessary ingredients. Seafood does not need to be defrosted in advance. If you do not find a special kind of rice for paella, take any round-sized one.

    Put octopuses, squid and mussels without shells in a separate container, they will not be useful to you yet.

    If you don't have a paella pan, take any shallow one with a flat bottom. I used a frying pan with a diameter of 22 cm. Heat the oil in a frying pan, put the mussels and shrimp. If the shrimps are boiled, heat them for 1 minute and remove from the pan. If not, fry on both sides until cooked, until they turn orange. Remove the mussels from the pan when they open. Those that have not opened - throw them away, they can not be eaten.

    Peel the onion and garlic, rinse and cut into small cubes. Put them in a frying pan and fry over medium heat for 3-4 minutes, until the onion is soft.

    Wash the tomato, remove the stalk and cut into arbitrary pieces. Add it to the onion and garlic. Stir-fry for 2 minutes.

    Rice does not need to be washed. Add it to the pan. Stir until smooth and fry a little, 1 or 2 minutes. You can turn down the heat so that the paella does not burn.

    Add hot water (or broth). Add salt and mix until smooth. Simmer over medium heat for about 10 minutes. The liquid should evaporate by about half.

    Wash the bell pepper, remove the stalk and seeds, cut into small cubes. Add to the pan and spread evenly.

    If there is too much liquid, make the fire bigger so that it evaporates faster. Cut the squid into rings or half rings. When the rice is already higher than the broth, add raw seafood. Simmer for another 2 minutes.

    Then add the peas, mix, taste. If necessary, add more.

    When there is almost no broth left, turn off the stove, the paella is almost ready.

Remove the pan from the heat, put the remaining mussels and shrimp on top, cover with a towel or lid and leave for 10-15 minutes. Paella is usually served in a frying pan or a large round dish, adding lemon slices and garnishing with herbs.

After adding seafood, you can not keep it on the stove for too long, so that the seafood does not become "rubbery" and the taste of the finished dish does not deteriorate.

Tomatoes in this recipe can be replaced with ketchup, tomatoes in their own juice or tomato paste. Choose the proportions to your taste.
