Yeast-free pies on kefir in a frying pan

Soft, airy and delicious cabbage pies for tea! Some housewives deny themselves and their households such delicious pastries as pies, because they believe that it is difficult to "mess around" with yeast dough for a long time. It turns out that it is quite simple and fast to fry fluffy and soft pies even without using yeast in the dough. This product may well replace ordinary kefir, which is better if it is not very fresh. The preparation of such pastries is also a great way to dispose of the remnants of yesterday's kefir, which you no longer want to eat in its natural form.

Step-by-step cooking

Cooking time: 1H
  1. Step 1:

    Step 1.

Prepare the ingredients for the pies. All products stored in the refrigerator must be removed from it in advance so that they are at room temperature. We drive a chicken egg into a bowl, add salt and sugar, shake it so that the chicken egg spreads, and the sugar and salt dissolve.

  2. Step 2:

    Step 2.

Pour in kefir (it's better to warm it up a little so that the milk bacteria contained in it become more active). Kefir should be used for such baking greasy and not very fresh, the longer it stands, the more lactic acid is formed in it, which in turn will better extinguish soda and, consequently, the more lush the pies will turn out from such dough. But, of course, a very old and spoiled product cannot be used for food even in this form.

  3. Step 3:

    Step 3.

Add sour cream and mix. Pour in vegetable oil. It is necessary so that the dough turns out elastic and does not tear when forming pies.

  4. Step 4:

    Step 4.

Pour in part of the sifted wheat flour. And add the soda, mix and leave the mixture for 10 minutes so that an alkaline reaction occurs. This is the main secret of making an air dough without using yeast. Soda should be added when part of the flour has already been introduced into the dough, then the alkaline reaction with kefir will flow directly into the flour, raising the dough.

  5. Step 5:

    Step 5.

We introduce the remains of sifted wheat flour and knead an elastic smooth dough. We wrap it in plastic wrap and leave it on the table for half an hour.

  6. Step 6:

    Step 6.

Meanwhile, we will make the filling for the pies. For such a test, both sweet and not sweet filling is suitable. Delicious pies are made with cabbage filling. We peel the white cabbage from the upper leaves, cut out the stalk, chop the cabbage finely, you can chop it with a blender.

  7. Step 7:

    Step 7.

In a bowl with cabbage, beat in a chicken egg and add a couple of tablespoons of sour cream, salt to taste. Mix it up. The filling is ready.

  8. Step 8:

    Step 8.

Divide the dough into 10 equal pieces, roll them into small cakes.

  9. Step 9:

    Step 9.

Put the filling in the center of each tortilla, fasten the edges.

  10. Step 10:

    Step 10.

Pour vegetable oil into the pan, heat it up. Fry the pies on medium heat for 5 minutes, until browned on both sides. We serve the pies to the table, with tea, coffee or milk. Bon appetit!
