Step-by-step cooking

Cooking time: 1 h 40 min
  1. Step 1:

    Step 1.

How to make cakes with cottage cheese in a frying pan on kefir? Prepare the products. Kefir can be of any fat content. Take it out of the refrigerator in advance so that it becomes room temperature. Sift the flour, so it will be saturated with oxygen, and at the same time possible impurities will be removed. For the filling, take fresh cottage cheese with a fat content of at least 5%.

  2. Step 2:

    Step 2.

Prepare the dough first. To do this, take a deep bowl, pour kefir at room temperature. Pour soda into it and mix. Leave the mixture to stand for 5 minutes. During this time, the soda will react with the acid in the kefir. As a result, gas will be released, which will make the dough fuller and softer.

  3. Step 3:

    Step 3.

Add salt, sugar and vegetable oil to the bowl. You can use any of your favorite oils. But it's better to take it odorless. Thoroughly stir the kefir mass so that the salt and sugar crystals completely dissolve.

  4. Step 4:

    Step 4.

Then take the flour and start gradually mixing it into the dough. Flour can be sifted directly into the bowl or do it in advance. The sifted flour will make the dough more airy and lush. Leave about 50 grams of flour to roll out the dough.

  5. Step 5:

    Step 5.

First knead the dough with a spoon, and when it becomes more difficult to do this, put the dough on a table or a board dusted with flour and knead with your hands. Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the consistency of the dough. It should become homogeneous, soft. It may stick to your hands a little, it's not scary.

  6. Step 6:

    Step 6.

Put the finished dough in a bowl. Cover it with a napkin or tighten the bowl with cling film so that it does not chafe. Leave it on for 20 minutes. During this time, gluten is formed in the dough, so that the dough becomes more elastic.

  7. Step 7:

    Step 7.

During this time, make the filling for the tortillas. How to make the filling? It is based on cottage cheese. It is better not to take a granular one, since large grains can tear the dough when rolling out the cakes. Wash and dry the greens, and then finely chop them. You can use any greens that you have available. I took a mixture of dill, parsley and green onions.

  8. Step 8:

    Step 8.

Put cottage cheese, chopped herbs in a bowl, add salt to taste and add spices. I added freshly ground black pepper. Use your favorite spices or add something new, because you can always experiment and get a new taste.

  9. Step 9:

    Step 9.

Mix the mixture thoroughly so that the filling is homogeneous and the salt and spices are evenly distributed. The filling is ready.

  10. Step 10:

    Step 10.

We will have three tortillas, so divide the finished curd filling into three equal parts. I used kitchen scales, but it is quite possible to divide the mass by eye. Roll the filling into buns, it's easy to do if the cottage cheese is moderately moist. It's not scary if the cottage cheese is badly molded, it will not affect the final result.

  11. Step 11:

    Step 11.

During this time, the dough rested, all the liquid was absorbed into the flour, gluten was formed and now it is convenient to work with it. Knead the dough, divide it into 3 equal parts and roll it into buns.

  12. Step 12:

    Step 12.

Take one bun and roll it out with a rolling pin into a circle with a diameter of about 10 centimeters. If necessary, dust the surface with flour, but do not clog the dough, otherwise it will become stiff.

  13. Step 13:

    Step 13.

Put a curd bun in the center of the workpiece.

  14. Step 14:

    Step 14.

Wrap the filling with dough, gradually collecting the edges of the tortilla from above. Pinch the edges well so that the filling does not come out when rolling out.

  15. Step 15:

    Step 15.

First, gently press the resulting ball with your hands, forming a round cake. Then roll out the tortilla with a rolling pin so that it turns out to be about 20 centimeters in diameter. Try not to tear the dough.

  16. Step 16:

    Step 16.

Put the frying pan on medium heat and heat it well, you do not need to lubricate it with anything. I use a frying pan with a non-stick coating, the tortillas will not burn on it. But it should also work on a regular frying pan. Lay out the tortilla and fry for about 3-5 minutes.

  17. Step 17:

    Step 17.

Turn the tortilla with a wide spatula to the other side and fry for another 3 minutes. Focus no longer on the time, but on the degree of roasting of the tortilla. It should be browned, the dough should not be raw.

  18. Step 18:

    Step 18.

Put the finished tortilla on a large plate and immediately, while it is hot, lubricate the surface with butter. The crust will become soft and acquire a creamy taste.

  19. Step 19:

    Step 19.

Fry the remaining tortillas in the same way, stacking them. The cakes are airy, with a delicate filling. They can be eaten instead of bread, but they are also good as an independent dish. Serve the tortillas with cottage cheese on the table hot. Bon appetit!
