Cooks have come up with many recipes for cooking red fish, and especially pink salmon. It is salted, smoked, baked. In this recipe we are talking about an interesting way of cooking - on a charcoal grill. The fish turns out deliciously delicious!

1. First of all, we check the fillets for the presence of bones. We try to select all the protruding bones. It is convenient to do this with tweezers. Cut the fillet into pieces.

2. Brown sugar is poured into a bowl, salt and freshly ground black pepper are also poured here. Mix it up.

3. Choose a suitable container, line it with foil. Pour part of the mixture on the bottom, spread the fish. Sprinkle with the remaining dry mixture of salt, sugar and pepper.

4. Cover with foil, send it to the refrigerator overnight. In principle, if there is no time, then it is possible for 4 hours. This mixture will slightly pull the moisture out of the fish, give it a flavor. Each piece will acquire a denser meat structure.

5. We will prepare hot coals in the grill. Flashes of fire should not appear. We install a grill over the grill. We place dostochki on it.

6. We spread the pieces of fish on the dostochki. We observe the distance. Spread rosemary sprigs between the pieces. Sprinkle the fish with freshly ground black pepper, sprinkle with lemon juice.

7. Cook pink salmon on coals for 20-30 minutes. It should be thoroughly browned.

Bon appetit!
