To start, we will prepare the fish. It's good to wash three pre-thawed steaks, blot excess moisture with a clean cloth or paper napkins. then generously season the fish steaks with salt and freshly ground black pepper. Rub the seasonings into the fish pulp.

We prepare three saucers into which we pour: breadcrumbs into one, flour into the other, break an egg into the third and shake it with a fork. The contents of each saucer are seasoned with a small amount of salt and ground black pepper.

We put a frying pan on a strong fire to warm up, preferably a cast-iron one. We warm it up well by pouring vegetable oil into it. When it heats up, we proceed to the main stage of cooking - frying fish.

What are we going to do? We take the first steak and dip it in flour with the side down where the skin is. After dipping the steak into an egg, then into breadcrumbs. We press the steak on the crackers so that they stick in a dense layer, a crust. We put the steak on a clean plate and do the same with the rest of the fish pieces.

Now we put all the steaks in a preheated frying pan at once and fry the fish for 5 minutes. Then cover the pan with a lid and cook for a few more minutes - no more than 5. This is important, because the fish can not be overfished - it loses its taste and begins to fall apart.

Ready-made steaks are laid out on serving plates. We season them with our favorite sauces suitable for fish. Decorate with fresh herbs and slices or slices of lemon or lime. Pour lemon (lime) juice on top of the steaks, serve them on the table until the fish has cooled down.
