Classic bigus with smoked meats

    Choose the necessary products for cooking our delicious dish and rinse the sauerkraut with water through a colander.

    Heat a frying pan on the stove with vegetable oil added to it, cut two types of onions at random and send it to the frying pan.

    Stir fry the onion until transparent.

    Put the fried onion in a separate bowl.

    Cut the bacon and ham into pieces and put it in a frying pan.

    Stir-fry the ham and bacon lightly, if necessary, add vegetable oil.

    We put the bacon and ham in a separate container.

    Add a little vegetable oil to the pan and spread the sauerkraut to fry, which we do not forget to stir.

    After 10 minutes, add 150 gr. water and stew the cabbage until it boils completely.

    Add fried onions, tomato paste, bacon and ham, finely chopped garlic and pepper to taste to the cabbage, mix well and simmer until the dish is ready for another 10 minutes.

    We spread the prepared dish on a plate, sprinkle coriander greens on top and serve it to the table. Bon appetit to everyone!

Bigus with sauerkraut and fresh cabbage is a dish of traditional Polish cuisine, although they say that it owes its appearance to Lithuanian chefs. Initially, the process of cooking bigus was quite difficult and took several days.
Modern housewives cannot afford to take up such an amount of time, and therefore the classic recipe for cooking a dish takes about an hour and a half if we initially cook fresh meat.
Smoked meats give bigus a special taste, and you can enhance it with dry white wine. If you do not want to use alcohol, replace its volume with plain water. Delicious, satisfying and very simple!
Bigus is good to cook after the holidays, when small pieces of various smoked meats remain from the abundant table — and the meat will go into business, and additional costs will not be required.
But all these culinary studies are possible and simple when you have sauerkraut in the refrigerator, without it bigos will not be bigus.
