Cooking method

Wash the cabbage and chop it. Let it dry a little. Grind in a coffee grinder or grind cloves, cardamom and cinnamon sticks in a mortar.

Heat 3 tablespoons of ghee or vegetable oil in a saucepan over moderate heat. Put the sliced potatoes in a saucepan and fry until light brown, stirring and making sure that the potatoes do not burn.

Remove the potatoes from the pan and set aside.

Put the remaining butter in the same saucepan and fry the grated ginger in it. Add the red pepper and turmeric and continue to fry for a few more seconds, then add the chopped cabbage and fry for another 3-4 minutes, stirring frequently so that the cabbage mixes with the spices and does not burn.

Add tomatoes, fried potatoes, salt, sugar and water. Close the lid and simmer over low heat until all the vegetables are soft.

Before serving, season with pre-prepared ground sweet spices and mix gently.
