I offer you a recipe for an incredibly delicious pancake cake with salmon.
It is absolutely not difficult to prepare such a cake, and it takes only 15 minutes to prepare.
First prepare the cream sauce. Garlic and herbs are crushed with a knife, cucumbers are cut into thin strips. Sometimes I cut into cubes, the taste of cucumbers turns out to be a little more pronounced, which is also delicious.
Put cottage cheese, melted cheese, sour cream or mayonnaise in the blender bowl (I like a mixture of sour cream with mayonnaise 1:1), crushed garlic and herbs, salt, pepper and whisk until a homogeneous creamy mass. It is better to use an immersion blender. Add pickled cucumbers to the cream sauce. We try the resulting cream sauce and, if necessary, add if something is missing - spices, garlic, cucumbers. In general, to your taste. Someone loves it sharper, someone is more gentle.
I won't tell you the recipe for pancakes. Absolutely any pancakes will do, as long as they are not thick, otherwise they may break.
In a rectangular shape, lined with cling film or foil, we overlap two pancakes so that their edges hang out of the mold. We put two more pancakes on top of the first ones, but already from the narrow side of the mold.
Now we put the filling on top of the pancakes. First 2-3 tablespoons of cream sauce, then sliced fish strips. We put a pancake on top of the fish. I cut the pancake in half and stack it with slices to the walls (it should be clear from the photo). Then again the filling, and again the pancake. Repeat the layers until the whole filling is finished. By the way, part of the filling can be left to decorate the cake.
When you lay out the last layer of filling, fold the edges of the first four pancakes inside, cover with film or foil and put them in the refrigerator to infuse. In principle, two hours will be enough, but it's better to stay longer.
After two hours, we take our cake out of the mold and decorate it at our discretion. For a festive table, you can decorate the cake with cream sauce deposited through a pastry syringe, fish roses and herbs.
