1. Preparation of the batter: beat the milk with 3 yolks, add salt, add olive oil and finely chopped herbs. After adding flour and breadcrumbs, knead the dough. Then introduce the whipped whites into a strong foam, mix gently.

2. Preheat a saucepan with enough vegetable oil (to hide the submerged pieces of crab meat) until the first signs of boiling.

3. Dip the pieces (from matchboxes) into the finished batter, then into boiling oil and fry until golden brown.
Remove with a slotted spoon.
