To prepare such pancakes, you will need first of all good quality rice flour. It must be sifted through a special fine sieve. So the flour gets rid of all foreign impurities and at the same time is saturated with oxygen. It is important not to miss this intermediate process, since it is thanks to him that the dough for pancakes turns out to be especially delicate and airy structure.

Sifted rice flour must be mixed with baking soda and a small amount of salt. Then you should put sugar according to your taste and preference. If the family likes sweets, then you can put more sugar. If you plan to serve pancakes with honey, homemade jam or maple syrup, then you can put a minimum amount of sugar.

For a pleasant appetizing aroma, add vanilla sugar to the dough (you can replace it with vanilla or vanilla extract).

Mix all the dry ingredients together until smooth.

Kefir should either be put out of the refrigerator in advance or slightly warmed up to room temperature or slightly warmer. Fermented milk products react well with baking soda, especially at warm temperatures. Pour kefir into dry foods and mix the dough with a hand whisk or a regular tablespoon. There is no need to beat the dough strongly. Mix only so that there are no flour lumps, and the dough turns out homogeneous.

Next, prepare a large frying pan with a non-stick coating, which allows you to fry pancakes with a minimum amount of vegetable oil. Put the pan on the stove, pour in a little oil and reheat.

Put the dough in a frying pan with a tablespoon and fry them on medium heat until golden brown on one side and the other.

Put fried pancakes on a paper towel folded several times to absorb excess fat.

Serve rice flour pancakes on kefir hot with sour cream, homemade jam, liquid honey or chocolate syrup.
