Amazing pie for a family dinner. Everyone will like it! Loren quiche with fish can be cooked with both shortbread and puff pastry. And so, and so it turns out very well, fragrant, appetizing, satisfying and very creamy. A good way to please your family on weekday evenings or on a day off. You can prepare such a pie for the arrival of guests. The main thing is to keep a package of puff pastry in reserve in the freezer. Salmon for pie can be taken both fresh and canned. Other fish will do as well.

Cooking method

1. We take the dough out of the freezer in advance and defrost it to room temperature, and prepare the products closer to the point:

- my salmon fillet, lightly wet the moisture with a paper towel, and then cut into small pieces;

- we clean and wash ordinary and red onions, wipe them and cut them to your taste - finely or in half rings, each in separate bowls;

- vegetables, and you can take both fresh and frozen (in this case, they need to be thawed and drained in advance), washed, dried and cut into small pieces. Any vegetables will do - cauliflower, broccoli, carrots, corn or peas. Spinach will be good in this pie, and you can even add some chopped mushrooms;

- garlic cloves are cleaned, rinsed, dried and crushed in any convenient way;

- wash, dry and finely chop green onions and dill.

2. We prepare a baking dish with a diameter of 26 cm (you can do more, but in this case you need to add 1 more egg to the specified number of ingredients and take a little more vegetables), lubricate it with olive oil. Turn on the oven to warm up to 200 degrees Celsius.

3. On the work surface, sprinkled with a small amount of flour, we roll out the dough and put it in a mold, form the sides, cut off the excess dough. Let the base stand for 5 minutes, then prick the dough with a fork all over the bottom. After lining the bottom with a piece of parchment and pour a full base of peas or beans.

4. We put the mold with the base in the preheated oven for 15 minutes. The base during this time should become a pleasant golden color. We remove the parchment with legumes and bake the base for another 3-4 minutes. After we take the mold out of the oven and set it aside for now, and reduce the heating to 170 degrees Celsius.

5. We put a frying pan on medium heat, pour the remaining olive oil into it, heat it up. Then we put the chopped onion in the pan (the usual one, and leave the red one for now). Cook, stirring occasionally, for 5 minutes until soft. After we spread the prepared vegetables, chopped garlic, pour lemon juice over everything. Cook everything together for 10 minutes, then sprinkle everything with salt and ground black pepper and mix.

6. We break eggs into a large bowl, pour cream to them, pour salt (about half a teaspoon) and ground black pepper. Whisk everything together until fluffy.

7. Three cheese on a grater and add half to the pan to the vegetables, we also send salmon, chopped red onion, green onion and dill, as well as lemon zest and chili flakes. Mix and spread the mixture into the base. Pour the egg mixture on top of everything, and then sprinkle with the remaining cheese.

8. Put the form with the future pie in the oven and bake for 50-55 minutes. It may take a little more or a little less time. It is necessary that the egg is sufficiently baked. We remove the mold from the oven, leave it to stand for 10 minutes, and then serve it to the table.

A great addition to the pie will be a light vegetable salad, fresh herbs, sliced lemon.
