Cheese pie with spinach and meat

Cooking method

Before cooking, we check if all the ingredients are available, and then:

- we pass the lamb through a meat grinder. It is important that it is a young lamb;

- peel the garlic and grind with a fine grater;

- wash spinach, put it on a towel to dry;

- whisk egg whites lightly with a whisk;

- my dill, wet with a towel and finely chop;

- kneading sheep's cheese;

- three parmesan on a fine grater.

And now we start cooking:

1. Take a round baking dish with a diameter of 22 cm and a height of 6 cm. We line it with parchment. Turn on the oven to warm up to 200 degrees Celsius.

2. Heat a deep frying pan with olive oil over medium heat. We put minced lamb and chopped garlic in it. Fry the minced meat for 5 minutes, stirring constantly with a spatula. Then add the whole spinach leaves, cook for 2 minutes (until wilting). After we transfer the contents of the frying pan into a colander and put it over a large container so that excess moisture flows down. We wait for 10 minutes, lightly press the mixture with a paper towel on top so that the moisture is absorbed into it.

3. Transfer the mixture from the colander into a large bowl, add to it ricotta, beaten egg whites, chopped dill, mashed sheep cheese and grated parmesan. Salt and pepper, then mix everything well.

4. Fold the filo sheets and cut into long strips about 2 centimeters wide.

5. We put the filling in a baking dish, put ribbons of filo sheets on top, which we lubricate with olive oil (if there is a super spray, sprinkle with it).

6. We put the mold in the preheated oven, bake the pie for 50 minutes. It may take 5-10 minutes more - it depends on the oven itself. The filling should be cooked, and the filo ribbons should turn golden.

7. Remove the mold from the oven, let it cool slightly for 15 minutes, after which the pie can be served on the table.
