Vigna and sorrel omelet with cheese

Delicious and nutritious breakfast will energize you for the whole day! Vigna (asparagus beans) is a favorite vegetable in our family. I cook it in the summer and prepare it in various ways for the winter. For example, it can be frozen and then used in the preparation of various dishes in the same way as fresh. I share with you my favorite recipe for scrambled eggs with vegetables and cheese. Very tasty and satisfying!

Cooking method

Cooking time: 35 min

1. Peel and cut the onion into half rings.
2. Cut tomatoes into medium pieces.
3. Grate the cheese.
4. Cut the bread into cubes.
5. Pre-washed and dried vigna cut into pieces (the length of bread cubes).
6. Break the eggs into a bowl, add salt and spices to them. Mix it up.
7. Heat a frying pan with vegetable oil, put the onion in it and fry it until golden.
8. Add the vigna and bread, fry until the beans are soft.
9. Add tomatoes, simmer all together for 3-4 minutes.
10. Put the sorrel, stir, continue to simmer until the sorrel darkens.
11. Sprinkle everything with grated cheese.
12. Pour the eggs and fry them until tender.
