Finely chop the onion.
Heat the butter in a frying pan, add the onion and fry it until transparent.
Then add the bulgur and fry for another 3 minutes.
Pour in the vegetable broth, bring to a boil, reduce the heat, and cook for 10 minutes with the lid closed until the bulgur absorbs all the broth.
Remove the zest from the lemon and chop the greens finely. 
 As soon as the bulgur absorbs all the broth and is cooked, mix it with herbs and zest. Add salt.
Sprinkle with ground cinnamon before serving.
