We take all the products we need for the dough and filling. Choose delicious apples, I like sweet and sour, but you can also choose sour or sweet varieties - to your taste.

    First, we wash and cut the apples, removing the core. Then melt the butter in a frying pan, then add sugar, mix everything and put the apples. Having reduced the fire as much as possible, boil the apples for about 5-7 minutes. Then remove the mass from the fire and let it cool down. The amount of sugar in the filling can be adjusted depending on the selected variety of apples.

    Sift 2/3 of the flour into a bowl, add salt and sugar, beat in the eggs. We make a sourdough from warm milk, yeast and sugar in a separate container and put it in a warm place. Fermented yeast (after about 15 minutes) is sent to the flour and knead the dough well. At this stage, you can add the remaining third of the flour. Note that the flour may go a little more or less than indicated in the recipe. Focus on the consistency: the dough should be soft, plastic.

    Put the dough in a warm place so that it rises. As soon as it increases 2-3 times in volume, knead again. And we repeat this procedure a couple more times, and then we knead it well again. Divide the dough into equal pieces. We roll out each piece with a rolling pin or knead it into a flat cake with our hands, let them rise a little.

    Put the apple filling in the center of each tortilla and, connecting the edges, form a pie. I advise you to spread the filling one by one on each tortilla and immediately make a pie, pinching the edges tightly so that the filling does not leak out.

    We spread the finished pies on a greased baking sheet and let them rise a little.

    After increasing in size, lubricate the pies with egg yolk. Let them bake now in a preheated oven to 200 degrees. We bake for about half an hour.

This sweet yeast pastry is just right for the tea party. With such pies you will not stay hungry. And you can also take them with you as a snack to work or school. They turn out ruddy, soft, airy, with a juicy filling and an excellent aroma, which is simply impossible to resist, and you don't need to!

The liquid in which yeast is bred should be pleasant to the touch, no higher than 40 degrees. Why is this important? In a warm environment, yeast is well activated, in a hot one it will die, and in a cold one it simply will not work. To avoid unpleasant surprises, check the yeast before mixing with the rest of the ingredients. Pour a little warm milk into a bowl, stir in the yeast. Cover the bowl with a kitchen towel and put it in a warm place without drafts for 10-15 minutes. During this time, a foam yeast cap should appear on the surface of the sponge. If this did not happen, then the fermentation process has not started (the yeast is overdue or spoiled). In this case, it is worth taking other yeast, otherwise baking will not work.

Be prepared for the fact that flour may need more or less than indicated in the recipe. Focus not on the amount of flour, but on the desired consistency of the dough. To avoid mistakes, read about flour and its properties!
