Carefully separate the meat from the bones and remove unnecessary films and tendons. The formation must remain intact. If the meat is not a young animal, then you need to soak it in water with vinegar. It is better to do this in advance – a long procedure (1 day). Pour the goat meat with water so that it slightly covers the whole piece and pour in the vinegar. Leave in the refrigerator for 24 hours. After this time, we start cooking.
Prepare the vegetables. Grate the cucumber coarsely, cut the onion into smaller cubes, or squeeze out the garlic with a press or finely chop.
Add garlic and onion to the cucumber mass. Mix it up. We put the meat on the board and beat it off a little with a wooden hammer. This layer is rubbed with salt, pepper and hops-suneli. Put the filling on the meat and level it with a uniform layer. We roll the goat meat into a roll, as tightly as possible.
Wrap our roll in foil. You can also use a sleeve for baking, but then you need to tie the meat with a culinary thread. Leave in this form for pickling for 1-2 hours.
Preheat the oven to 200 degrees and cook goat meat in it for 40 minutes. Cut the finished meat into portions and we can treat the household. It is not a shame to put such a dish on a festive table. I think everyone will like it.
