    How to make a pie with fish and rice? Prepare the products. Take refined, odorless butter for the dough. For the filling, I used canned pink salmon, but you can make such a pie with fresh fish. Take round-grain rice, it will bind the filling better, unlike crumbly.

    Prepare the dough. How to make dough? Sift the flour into a large bowl, pour water into it, add salt and add a couple of spoonfuls of sunflower oil. Knead a soft, homogeneous dough that will not stick to your hands. Be prepared for the fact that you may need more or less flour than the amount stated in the recipe. Look at the consistency of the dough. Put it in a bag for 20 minutes while you are doing the filling.

    How to make the filling? Boil the rice (I usually do this in the microwave: I wash the rice, pour water in a ratio of 2:1, and put it on 80W power for 10 minutes. The rice for the filling is ready, it remains only to cool it). Drain the filling from the canned fish, mash the fish itself with a fork. If you use fresh fish, then cut it into fillets, which are then cut into cubes and put in a small amount of water.

    Peel the onion. Cut it into small cubes. Onion will give the filling a sweet freshness and juiciness.

    Mix the fish with rice and onion. Add a little ground pepper. Try the filling, add salt if necessary. You can also put your favorite seasonings and spices.

    Grease the mold with oil. I have a ceramic one with a diameter of 24 cm. Divide the dough into two unequal parts. Roll out most of it into a thin round layer with a diameter larger than the shape. With your hands, distribute it along the bottom, going out on the sides. Put the filling on the dough.

    Roll out a smaller part of the dough into a thin layer and cover the filling, pinch the edges, for greater strength you can fix the seam with a "pigtail". Make a few punctures with a fork and a hole in the center for steam to escape.

    Put the pie in the oven, preheated to 180 degrees for half an hour. When it turns brown, take it out and lubricate the surface with oil. Cool the pie in the mold, then put it on a board or dish.
